Le Tamarin occupies a tropical garden inland from Saline Beach, built around the tamarind tree that names it. This is the island's temple of the long lunch: three hours, rosé, French-Caribbean plates, hammocks between courses, and the pilgrimage to Saline's sand afterward. The art collection scattered through the garden rewards wandering. Dinner under the lit canopy is quieter and, arguably, even better. The combination Tamarin lunch + Saline afternoon is the single most repeated recommendation we give.
